January 2019 goals

4 January 2019

I am feeling so grateful for the fresh start of a new year! January is always one of my favorites on the blog — one of the things I most love to do here is share tips for living as calm, confident, and capable women, and it feels like we’re all especially ready to sharpen ourselves this month! I hope to share a number of posts that will be helpful as you kick off your 2019, but for now, here are my January goals…

coastal Christmas

On my calendar this month:
— June’s third birthday party! Pink and purple sprinkles themed, per the birthday girl.
— Five days and four nights without John while he heads to Texas for job training – eeps!
— Our 14th dativersary!
— The premier of the new season of The Bachelor :)

What I’m loving right now:
— My in-laws got me this beautiful salad bowl for Christmas (we didn’t have one on our wedding registry!) and I can already tell it’s going to be a beloved piece in our home!
— These baked chicken meatballs are so yummy — I need to make a larger batch to keep in the freezer.
— I’m not sure if this counts as something I’ve loving because I haven’t actually used it, buuuuut John got an Instant Pot for Christmas. Hit me with your favorite recipes — all I know is I can cook frozen chicken breasts in half an hour!!

What I read in December:
— Errrr, nothing. Feeling very motivated to get back into a good reading rhythm this month!

January goals:
— Make a master list of months (of photos) still to be culled and sorted, then make a schedule to complete them in a year
— Shake the dust off our road bikes and bring them to the shop for a tune-up
— Read what the Bible has to say about Sabbath
— Host the first meeting of our church’s creative team
— Set reminders on my phone for walking and standing during my work days
— Set up a weekly meal exchange with my friend Katie, inspired by Victoria!
— Hang our new mirror in the living room
— Finalize my magic list :)
— Write our sweet girl a note on her third birthday (continuing a tradition)
— Order our 2018 photos from Social Print Studio

As a reminder, many of the goals above are drawn from my 2019 goals!

Hit me with your Instant Pot recipes if you’ve got em — otherwise, I’d love to hear something you’re looking forward to this month!

It looks like you’re knocking out all of your 2019 goals this month, you won’t have anything left to do but kick back and relax after January! haha
Good luck with John being gone, you can do it!

Sounds like a good month ahead! My goals are seeing Justin Timberlake (tonight!eek!), completing my workout app each day, sending some snail mail, drinking more water, remembering to floss and take vitamins, and going to book club! Hooray for a fresh start!

I’m still figuring out the best uses for our instant pot, but how fast I can cook frozen chicken is my favorite trick so far! I’ve also made spaghetti a few times and it’s a little ridiculous how easy it is.

My favorite soup recipe in it so far is this one: https://40aprons.com/whole30-instant-pot-chicken-tortilla-less-soup-paleo/

You can definitely add sour cream, cheese, tortilla chip, no need to keep it whole30 :)

this chicken tortilla soup is the best! https://www.acozykitchen.com/instant-pot-chicken-tortilla-soup/ we actually double the chicken usually. Deep frying the tortillas is also very worth it, but I just crumble chips when I don’t feel like going through all that!

SO excited to see y’all starting meal swap!! It’s inspired me to try so many new recipes and really enjoy cooking again after a slump while I was pregnant with Sophie! :) I even bought a new cookbook a few days ago with the swap in mind, haha! Also.. reading these goals and reflections inspired me to try and jump back into blogging goals and just blogging in general!

His recipes aren’t exactly the healthiest, but Pressure Luck Cooking (in particular, his YouTube videos) got me over my IP anxiety. Because of him, I now own TWO IPs, and we’ve made MANY of his recipes. Pastas, creme brulee, Thanksgiving turkey breast, egg drop soup, butternut squash soup (a favorite!)… all amazing! Here’s a link to his site, but truly, check out his YouTube channel, too: https://pressureluckcooking.com/recipes/

Also, Pinch of Yum’s “12 Healthy Freezer Meals That You’ll Actually Love” is a thing of beauty. The easiest! https://pinchofyum.com/12-healthy-freezer-meals

I cannot wait to read your magic list! And cheer you on as we dive into this new opportunity (2019!) to live out another wonderful year, friend. Also, your excitement over your salad bowl inspires me too to use the wooden we got for our wedding almost nine years ago. Let this me the year of more salads in pretty bowls! :)
